Just Plain Amazing

I apologize to those of you who may have been waiting for a post yesterday.  I had every intention to make it happen, but then time got away from me and I didn't make it happen.

My day started with quite the giggle as my phone auto corrected/predictive texted a naughty word to my friend and O.T., Sybil.  My appointment was at 11:45 am yesterday, and since it was earlier in the day and a Monday, I thought I would offer to pick up a chai tea for her on my way in.  Here's the Text:
Me: "Hey Hooker, you want me to get you a HOT chai tea?"
Syb:"Hooker?! You mean MacGyver? And yes, please :)"
Me: Oh. My. Gosh. HOTSHOT. I meant Hotshot.  I swear to God.  I am horrified!  I would never call anyone that, and if I did, it would never be serious!"

Yeah, so when I showed up, I just started laughing, handed her her cup, and said I couldn't even make eye contact at that moment, and we laughed some more.  I managed to keep most of my car on the gravel road as I was frantically trying to explain my blunder.  The funny thing is, I had turned that function on my phone off.  So, someone pulled a dirty on me.  Well played, phone altering ninja.

The day rolled on, and the fun continued.  I was STARVING when I got home, so I decided I was gonna do some food creating, and I have to report, I did pretty darn well.  I made a baked fruit cobbler, a bacon, avocado, craisin, cucumber and romaine salad topped with a swish of honey and some McCormick's salt-free veggie seasoning.  It was most stellar!  Later on, I made "raw cookies" or "caveman fudge".  They are both the same thing, except the cookies called for unsweetened, flaked coconut, but I didn't have any.  So, it's fudge more than cookie.  All I can say is AMAZING!!  I could just sit and eat all of these delicious things by myself and never share...and probably be quite content in my corner of the world!

I am down 12 lbs as of last weigh in.  Today is weigh in day too, but I haven't made it down to the scale yet.  More than the weight loss is the way I feel.  I am awake at 8, and though not chipper, I'm ready to roll for the day.  I have the energy of a teenager, my thinking is clearer, my attitude and mood are both much better, and I don't need a nap in the middle of the day anymore.  Had I know that eating this way would make me feel better in the above areas, I would have done this eating lifestyle switch long ago.  The weight loss is important, but almost secondary.  I have talked to a bunch of people about eating this way, and a majority have said it sounded like something they could try.  My cousins have been eating gluten free for some time, and after talking to Alyssa, who hadn't gone grain free, it sounds like she may try it.  Her mom, Angi said she eats paleo, and that is exciting, cuz she knows how to make gluten free goodies!  I bet she will make killer paleo deserts...and share with me.  GLORIOUS!  I spoke with Paul some, too, and it sounds like he is almost "in".  I wish I could jump up on the mountain and just proclaim that this is wicked awesome!!

Here are the recipes from yesterday:

Fruit Cobbler Thing:
Preheat oven to 325*

10-15  cherries, pitted and halved
1 Apple, quartered and sliced into chunks
1 Peach (I used white flesh peach) quartered and sliced up

(you can add probably any fruit and it will be great! This is just what I had available)

Put all ingredients in a Tupperware bowl with a lid.  Sprinkle on some cinnamon and nutmeg and shake that baby til your arms fall off.

I made a crust of crushed pecans and honey butter, but it wasn't that amazing.  You could do it, and you may love it.  It wasn't bad, it just didn't add to the dish.

Spread in a baking dish of your choice (glass) and bake for 20-30 minutes, or until the fruit is tender.
Drizzle honey over the top and enjoy!

Primal Fudge AND Raw Cookies

2/3 Cup of Honey
2/3 Cup of Almond Butter (or Cashew Butter)
2/3 Cup of Cocoa Powder
2/3 Cup of Cold Pressed Coconut Oil
3/4 Tsp of Vanilla

Add all ingredients except for the coconut oil to a blender.
Heat coconut oil over medium heat until melted. Then add to blender.
Mix until smooth and well-blended.
Pour into a pie dish or small glass pan and freeze for 15 min or refrigerate for 30 min until set.
ENJOY!

**For the cookies, you add 2/3 cup of flaked, unsweetened coconut, mix contents in a saucepan over low heat, and drop by spoonful onto parchment paper; refrigerate until firm.  


The salad was just bacon, romaine lettuce, craisins, avocado, honey and the veggie seasoning.  That's it.

I am really enjoying cooking these dishes and eating this way.  It is far more simple than I expected it to be, and it's fun, too.  I just bough a cookbook for baked dishes, like waffles, breads, scones, cakes and cookies that are ALL paleo compliant.  As I try them, I will post them.

  1. Yeah, good luck finding unsweetened coconut. It's ridiculous that I have to pay MORE for something that is LESS!!
    Isn't coconut oil awesome?!

    1. I am going to Winco and Trader Joes. I bet between them, I can find what i am after. Winco has bulk coconut flour, so maybe I will get lucky with the coconut, too!
